Mashed Butternut Squashed. Or squashed Squashed. ;) Fry up a quarter red onion (diced) and a quarter bell pepper (diced). Add the squash with a handful of spinach and a teaspoon each of oregano, ground garlic, and black pepper. Add a half can of corn towards the end. #vegan
