Tahdig is a traditional Persian rice dish. The name tahdig means bottom of the pot, referring to the crispy layer of crusty rice at the bottom of the cooking pot. The dish is typically made with basmati rice, ghee or oil, and salt, while turmeric and saffron can also be added for a nice touch of color and flavor.
Tahdig is made by putting extra ghee or oil in the pan so that the bottom layer of the rice gets fried, while the rice layers above it get steamed. The dish can be served as it is or as a side dish accompanying stews and other main dishes.
In Spain, the crispy layer of crusty rice at the bottom of the cooking pot is called socarrat, in China it is guoba. What is the name of it in your country?

In Iran, eggplants are commonly cultivated, consumed, and used in various traditional dishes. The peak season typically falls during the warmer months of late spring, summer, and early fall. During this period, you're more likely to find a wide variety of eggplant-based dishes in Iranian cuisine, such as Kashke Bademjan.
This flavorful Iranian appetizer combines grilled or oven-roasted eggplants and kashk—a fermented by-product typically made with yogurt whey. The main ingredients are mashed until creamy, with the addition of sautéed onions, garlic, various spices such as turmeric or mint, and occasionally ground nuts.
Kashke bademjan is enjoyed as an appetizer, a dip, or occasionally the main course, and is best served with warm lavash bread on the side.

Ghormeh sabzi is an Iranian herb stew, commonly eaten everywhere in Iran and considered the country's national dish. Although there are numerous ways to prepare the dish, the essential ingredient is a combination of fried herbs, usually made with chopped parsley, cilantro, and chives.
Other varieties occasionally include greens such as leeks, kale, or spinach, which give the dish its dark green color and rich, pungent flavors. These essential ingredients are incorporated with kidney beans and cubed meat (most commonly lamb) to create a rich and dense stew.
Traditional Persian rice, known as polo, is usually served alongside ghormeh sabzi. The rice is boiled and steamed, resulting in an incredibly soft and mild side dish, and a perfect complement to this flavorful stew.
