@anna_presso @SamaHoole Yes, it’s not them alone per se, it’s the heme iron (from meat) + quantity of consumed meat + high heat combination. Some now use sodium ascorbate (Vit C) as a safer alternative against botulism, and, as it’s an antioxidant, it also prevents nitrosamine formation.

@SamaHoole It’s not the bacon, per se. It’s the nitrites. They change into nitrosamines in the stomach. Nitrites are a Class I carcinogen according to the WHO’s International Agency for Research on Cancer. Good news is, there’s nitrite-free bacon now.
