The github is not a problem. It's better than most I see, including mine.
You have two problems:
1) No traditional tech background
2) You're not from the favourite institutions of the industry.
The brutal truth is no amount of CV tinkering or improving for ATS is going to help you.
What you need to do is bypass the traditional hoops.
Make a lot of noise. Visibility is the name of the game.
Get optimised profiles on anything and everything you can think of.
Linkedin. Pnet. Indeed. Etc
Then show you are competent or at least eager.
Share your projects. Write up about a bug you fixed. Reach out to people you have no business reaching out to.
The aim is to make noise. Your career cannot coexist with shame. You must be shameless.
Participate in hackathons. Be in people's comments. Go to meet-ups. Join communities.Attend Industry events and the likes.
Then lower the bar. Everywhere you look it will look like people are living nice. Assume you don't deserve it and your path won't be as glamorous or easy.
This means taking anything and everything you can: Intern, graduate program, online internship, MICTSETA/QCTO learnership, 6 week bootcamp, part time at a startup etc.
The 2 problems I mentioned above can be solved by 2 things
1) Being Visible
2) Being Everywhere.
The economy is brutal but this advice works regardless of whatever you choose in Tech.
The above paragraph is important because the advice I gave you here works on a macro level. Things like choosing Software Dev, Cyber etc are micro decisions. And in tech it's easy to get shiny object syndrome. Learning a new stack, getting a new certificate, mastering a new language etc.
Those are micro factors. Without a traditional background ALL of them will be difficult to break into.
Focus on the macro factors you can influence. Which is being visible and being everywhere.

At a WITS conference this year, I asked a full symposium who knows what huggingface is, only 10% raised their hands. Kaggle, Zindi. These students just want to pass. No curiosity outside the classroom whatsoever. What do you mean you never used git? Docker? Aowa! ๐ฎ
