@ParkerTRichards I’d make the flax egg from meal rather than seeds, then add a bit of either tapioca or potato starch and some glucomannan (konjac) powder. That should give the matzo balls the cohesiveness they need. Psyllium is a good suggestion, too, but it could make the texture weird.
