This man is Dr Norman Ernest Borlaug.
Let me tell you something:
The original wheat, the so-called Bible-Era wheat is known as EINKORN WHEAT and it was 1.2 meters tall.
It had rough husks and survived on dry, harsh weather.
It was considered low yield wheat and therefore it didn't fetch much money on the commercial scale.
Einkorn wheat naturally bred with wild grass to produce another ancient wheat known as EMMER WHEAT.
EINKORN and EMMER varieties had an easily digestile gluten structure and therefore had zero to little inflammatory effects on the gut.
In late 1940s, Dr Borlaug who had studied botany, altered the genetic structure of Emmer wheat through intensive cross-breeding to produce the current semi-dwarf wheat variety.
The semi-dwarf variety gave farmers 10 times yields more than the original wheat.
Dr Borlaug was awared Nobel Peace Prize in 1970 for ending "world hunger" through intensive hybridization of natural wheat.
This modern variety is short and highly hybridized. It has a complex gluten structure that cannot be digested by human gut.
This indigestibility leads to gluten intolerance.
Gluten intolerance leads to an inflamed gut causing gastritis, ulcers, irritable bowel diseases and colon cancer.
Now, add this intolerance to the chemicalization of modern wheat through bleaching and you end up with disaster.
Modern wheat flour is bleached with Chlorine Dioxide and Calcium Peroxide giving it a white colour.
Modern wheat is not fit for human consumption. Its production is about prioritization of profits, rather than human nutrition.
The University of Minnesota gave us Ancel Keys who cheated us that saturated fats are bad and gave us seed oils.
