Celebrating 4 years work anniversary....

Four years ago today I started as a sous chef in Ireland.

The work has been exacting. It has also been the place where the craft has been tested every service, and where I have had to learn what it means to hold a standard when the room is full and the clock is against you.

I am still here. Still learning. Still grateful for the people who have made the hard days possible, and still looking forward to being recognised for the work itself.
