the yield is from the underlying Aave protocol, which is a market-based system that allows users to take out overcollateralized loans with their deposits. So interest rates on deposits vary based on ratio of depositors to borrowers (so more realistic concern is yields decreasing when a bunch of people deposit)
not sure about the specifics on the insurance, but Aave has been around a pretty long time at this point (even making it through the '22 FTX and Terra/Luna blowups relatively unscathed), and i'm pretty sure depositors have never experienced any loss of principal
