If you activate it before Gravity has resolves, it adds 1 making it a 4. Then Gravity turns the 4 to a 3.
If you wait for Gravity to resolve and turn the 3 into a 4, activating The Bone will add 1 to the 4 making it a 5

The active player recharges (turns upright) objects they control. Any objects controlled by the game (with the exception of shop items) also recharge."
