@bbbrianna23 The number of branches in a polysaccharide makes it more water soluble. Good forms of soluble fibers have starch. Starch has two forms as either amylose and amylopectin. Amylopectin has a larger surface area and binds to water better and helps with digestion #hunterbiochemistry.
