This advisory is part of the campaign of the Department of Tourism through the DOT Eastern Visayas aimed at ensuring a SAFE AND CONVENIENT travel and vacation in Catbalogan City and the whole Eastern Visayas region.

Tamalos may not be widely known as Filipino delicacies like adobo and lechon, but this heirloom recipe from Catbalogan City, Samar deserves a spot as one of must-try delicacies for Filipinos. More than just a recipe, it thrives as a quiet yet rich symbol of Samarnon culinary heritage that is passed on within families and to their next generations. 

Described as a local counterpart of Mexican tamale, tamalos traces its roots to the Manila-Acapulco Galleon trade where it was introduced as a foreign influence in the Philippines. Unlike tamale that uses corn dough, shredded meat from chicken and pork, and chili sauce, Samarnons transform the dish of tamalos by replacing corn dough with glutinous rice in order to make it more flavorful and distinct from their region. 

At its core, tamalos is a savory, indulgent creation made with tender pork belly that is stewed in vinegar and spices. It is carefully assembled by wrapping the meat filling in a lumpia wrapper, layering it with thick peanut sauce, and enclosing it in banana leaves before steaming it for two hours. The result is a soft, flavorful delicacy that is both comforting and deeply satisfying.

What truly sets tamalos apart form its other variations is the use of Samar's signature flavoring pipi-an, also known as a sweet and spicy peanut sauce. This flavoring in tamalos allows it to leave an indulgent taste, bringing a mix of nutty, sweet, sour, and spicy flavors.

The tamalos also takes the spotlight during the cooking demo of Secret Kitchens of Samar in Food WednesDates, held at Likhang Filipino Exhibition Hall on April 22.

Niño Quiañio, one of Secret Kitchens of Samar's featured "kitchen heroes," brings the Samar's delicacy to life by demonstrating the steps in preparing the dish. He showcases both tradition and technique—from layering the filling with peanut sauce to using banana leaves. As a kitchen hero, he promotes tamalos as part of the Samar pride and ensures to keep the legacy alive.

Tamalos is more than just a food in Samar—it reflects history, adaptation, and local pride that must be known and rediscovered to many. It also has the potential to gain wider recognition not only because it was created with love, but because it also offers a taste of Catbalogan's story that must live longer.
