In Azerbaijani cuisine, plov is never just a side dish; it is the undisputed centerpiece of any major celebration. Among the dozens of regional variations, Shah Plov, or “Crown Pilaf,” holds the highest rank. Historically reserved for weddings and grand banquets, its presentation is specifically designed to be a theatrical culinary event.

The defining characteristic of the dish is the gazmag—a structural crust made from overlapping layers of lavash heavily brushed with clarified butter. This edible casing lines the cooking vessel, effectively sealing the interior environment. Inside this protective layer, parboiled basmati rice is stacked with saffron infusions, slow-roasted lamb or beef, roasted chestnuts, and sweet dried fruits like apricots, plums, and golden raisins.

During the baking process, the bread acts as a miniature, sealed oven. It traps the rising steam and circulating fats, forcing the rice to absorb the sweet and savory meat juices without losing its individual, fluffy texture. Simultaneously, the high heat and clarified butter fry the exterior lavash into a rigid, golden shell. Slicing through the crust reveals a perfectly engineered contrast between the heavy crunch of the gazmag and the rich, aromatic interior.
