There was a specific moment when fat went from food to poison in the public consciousness.
It didn't happen because of science. It happened because of marketing.
1980s: The low-fat food industry explodes. SnackWell's cookies, fat-free yogurt, Lean Cuisine, Diet Coke. Every product screams "LOW FAT" or "FAT FREE" on the package.
Food companies realized they could charge more for products with less fat. Remove fat, add sugar, call it healthy, double the price.
But consumers needed to believe fat was dangerous for this to work. So they advertised relentlessly.
TV commercials showed fat literally clogging arteries like sludge in a drain. Magazine ads depicted fat as yellow globs sticking to clean arteries. Health campaigns used imagery of fat as disgusting, dirty, deadly.
The messaging was visceral. Fat wasn't just unhealthy. It was GROSS.
Schools taught children that fat makes you fat through simple word association. Eat fat, become fat. The logic was kindergarten-level but it worked.
Entire generations grew up thinking dietary fat is repulsive. People trimmed visible fat off meat and threw it away. Egg yolks were discarded. Butter was replaced with chemical spreads.
The cultural programming was so effective that suggesting fat might be healthy became social heresy. You were stupid, dangerous, or trying to kill people.
I watched this happen. I remember when butter was normal and fat-free products were weird diet food for people trying to lose weight.
Then suddenly butter was poison and fat-free cookies were "healthy."
The cultural shift happened faster than the science could be questioned. Within a decade, fat became repulsive in a way that's hard to overstate.
People who grew up in this era have genuine visceral disgust responses to visible fat on meat. They've been conditioned to find it repulsive the same way you'd be disgusted by mold or rot.
This wasn't education. This was psychological conditioning through marketing.
And it worked so well that we're still dealing with people who "can't" eat fatty meat because they find it disgusting, even after they understand the science.
That's not rational dietary choice. That's successful propaganda creating emotional responses that override logic.
The food industry wanted to sell you low-fat processed food at premium prices. So they made fat repulsive. And you believed them.
