@ThePatWhalen@connor_beem An analogy: lots of Chicago culinary boom of the 2000s was downstream of the success of really innovative operators like Lettuce Entertain and Charlie Trotter. A lot of Hosp. talent grew up in those systems, & ppl money were eager to back new entrpnrs who had that pedigree

@SumElseThing1 I agree theres a lot of aesthetic masquerading as thought, but simultaneously there is real political economy - gain enough traction advocating vis a vis public works and you find yourself in line for a paycheck. Or if you're a developer in a certain area, etc.
