Invalid analogy.
Even if total service time is the same, it makes no sense to have 1 line backed up out the door when you can have 2 lines inside the deli.
If you are standing in 1 of 2 lines, both being serviced by the same queue processor, you would of course expect to alternate with those waiting in the other line. e.g., TSA lines.
