@TamarHaspel Earliest known bread remains dated 14400 years ago in Jordan contained einkorn wheat, barley, oats. Einkorn is high satiety. Barley & oats have heart & gut healthy beta-glucan. My pizza crust has barley & einkorn. Delicious. Pitiful US flatbread is inferior to ancient.
@TamarHaspel How to motivate demand change? A place to start: school meals. Formulate healthiest possible pizza-like flatbread + toppings. Run 4 week “challenge”: volunteers get healthy versions. It takes human palate ~18 days to acclimate to new tastes. Gamify. Leader boards. Peer influence.
@NutritionMadeS3 Boiled whole grain hulled barley fits well as a substitute for rice. One can get beta-glucan in morning oats & dinner barley. I think barley is under appreciated. Maybe lowest glycemic index of any grain food?
@foodtank Great points! Now the gut microbiome experts are saying that diverse foods promote diverse beneficial gut bugs that keep us healthy. And complexity science says diverse systems yield resilience.
@NBPTROCKS Svetlana Masgutova’s methods of movement/breathing therapy applicable to post trauma recovery, ADHD, autism spectrum, etc. Her post trauma recovery book is well worth the $45.

@NBPTROCKS Potential permaculture intercropping design pattern? 7 crop types. Each crop patch surrounded by other 6 crop types. Every planting season do rotation: 7 seasons & it cycles back to start. Eg for isolating potato blight spread, one patch potato, other 6 non-nightshade.
@Josh_fitcheck13 I make boiled whole grain hulled barley. Do long soak (8 to 24 hours) before boil to maximize nutrient bioavailability. Make large batches & store in fridge for enhanced resistant starch that feed gut bugs. Glycemic index < 21? Heart healthy beta-glucan. Delicious.
@DrKristieLeong Power seems to be the least discussed. What are some power exercises? Is it like resistance training but different rate of repetitions?
@SomerwilTara We’ve got evidence coming in from many different directions all converging on plant forward fiber rich as healthy. Decades of Harvard diet/health epidemiology. Maura Fanti’s USC mice longevity studies. Tim Spector’s gut microbiome studies on huge numbers of subjects.
@Alexleaf Recent McGill UPF symposium had keynote presentation on food addiction given by addiction expert. Seemed convincing to me. Public awareness of engineered cravings + convenient healthier alternatives might be good combo for moving the needle.

@garytaubes@hubermanlab The advances in gut microbiome science is offering a new lens into diet/health. Seems to confirm epidemiology findings on plant forward diet, lots of whole grains & other fiber sources promoting gut health. And sugars & refined carbs promoting bad gut bugs. Good to stay curious.
@DrKristieLeong I got into habit of making long fermented no-knead sourdough whole grain bread on regular basis. Most of time it’s unattended. I switched to milling grains myself, so I get the germ that commercial milling removes for shelf life.
@cadospharma@nutrition_facts There are food prep methods for reducing or eliminating oxalates. Some methods like soaking have been practiced for tens of thousands of years.
@violin4all Ouch. I recall there were days this year when French temperatures were higher than Texas. For food systems adaptation, more amaranth may make sense. Drought & heat tolerant & each plant yields 40000 seeds harvest.
@TamarHaspel From diet/health perspective, luminaries like Christopher Gardner & Marion Nestle agree: Pollan nailed it. To fix obesity/T2D epidemic, climate adaptation, whole system from pizza shops to industrial ag needs to shift. More barley & buckwheat? More drought tolerant amaranth?
@foodtank I also think that Anna-Lena Klapp’s paper on addressing valid criticisms of EAT-Lancet Planetary Health Diet is extraordinary. Great example of problem solving in evolving a better food system. https://t.co/0qjMVnn6qn
@foodtank My feeling is that the EAT-Lancet Commission has been presenting & refining a vision spanning healthy people, healthy planet, equity, & lately how that vision can fit cultural culinary traditions. Deserving of World Food Prize?
