If it’s so safe as a coating, why did regulators have to approve it as a fungicide instead of a coating for organic foods?

EDTA was developed in the 1930s to bind metal ions in chemical processes. They began putting it into foods in the 50s as it bonds metal ions that accelerate spoilage. It's used mostly in detergents, water treatment facilities, and cosmetics. Yum. You guessed right if you said it's deemed non-toxic in small amounts. Small amounts won't kill you but it's in everything.
