1) Pancakes or waffles?
a) If they're bad, Waffles, if they're good, pancakes. Bad pancakes are terrible, while bad waffles are tolerable. A top tier pancake? *chef's kiss*

2) What are you looking forward to the most in South Carolina?
a) Im always looking for the best place to eat, and Ive long heard Charleston has a food scene that punches way above its weight class. Its also a very historic city, and I'm a big history nerd, so I'm really interested to check out some of the museums and historic houses in town.

3) Favorite client KPI?
a) As a restaurant accountant, I live and die by Prime Cost. Every restaurant is different, so food cost and labor cost are very dependent on the concept and style of service. At the end of the day, regardless of concept, if their prime cost (labor + cogs) aren't below 60%, the business is in trouble.

4) Favorite client report?
a) I like to visualize net cashflow vs net income in bar chart form. So many time I'll get the comment "we earned a profit, where'd the cash go?" and putting the differentiation between the two numbers in visual form, helps to depict to clients that delta.
