@WifeyAlpha Try to rest the meat, already wrapped in the crepes with the cling wrap, in the freezer for 30 minutes. Then wrap it in pastry. Egg wash. Back in the fridge for another 30 minutes. Another egg wash. Then the oven.

@jimiuorio @OptionPit @IndependenceArk @Bob_Iaccino 1 technique I use is, I let the fat sear first and let the oil drip through the grill until it starts a flame. Then I sear the meat on both sides by flipping it back & forth. Once I get the sear I want, I lower the flame to achieve med rare. Rest for 10 mins.
