This was one of the tastiest dishes Iβve eaten in ages. Need to ferment courgettes to try and recreate this at home now π€€
Fermented courgette, Cotto. One of the most engrossing plates of food in the city atm; fermentation imparting a fizzy sourness to the squash, half way towards a pickle but more w nuance & vitality, Calabrian hot honey and nutty Pecorino rounding out what could become a signature.
