About bird flock behavior:
I've been wondering whether it's the case number 6-7 group rule or it's due to turbulence caused by flapping of the wings that affects the aerodynamics surrounding them makes the whole flock to make the decision about where fly and turn next.

Now, the flock leader will be assigned immediately according to where to turn next and that's how they can turn really fast to make those patterns. Same goes for fishes. Also, fishes can easily detect and behave according to turbulence patterns in the water.
